Barre Cords/Open Cords - Octaves

How can an sixth string E Barre cord, and a fifth string E Barre cord, and an open E cord all be used interchangeably if they sound so different? Aren't they different octaves? And, if so, doesn't the sequence of cords in a song need to be at the same octive, especially if a singer is singing in a Key at a specific octave?

Thank you for introducing me to the concept of voicing. Very helpful.

Regarding playing rhythm for a singer, would the voicing concept apply or would you attempt to match his or her voice octave with, in my original example, one of the three E chords?
